Dopo la mietitura della canna da zucchero, viene lavorata da mulini del posto e la melassa ricavata conosciuta localmente come oro nero è inviata in distilleria.È un rum prodotto in piccoli lotti small batch, invecchiato inizialmente in botti ex-bourbon di quercia americana per poi maturare in tre diversi tipi di botti di sherry Fino,Cream e Pedro Ximenez.
